Charred Sardines

Light the BBQ

Clean 1kg of fresh sardines by rinsing in fresh cold water

For the marinade:

Grate the rind of one orange and one lime into a bowl

Squeeze each fruit onto the rind

Add one cup of virgin olive oil

pinch of sea salt and a pinch of black pepper

Add the sardines, cover with film and leave to marinade in a refrigerator for 30 minutes.

When the charcoal is white hot start to grill the fish, approx. 40 seconds on each side.

Serve with fresh bread, olive oil and nicely chilled rose wine.
